Blueberry Jam Recipe
Everyone loves blueberries. Blueberry jam is beautiful in its dark blue colour and the taste is just divine.

Preparation Time is approximately 20 minutes and this jam recipe makes around 500ml (2 cups) of jam. Cooking time is 20 minutes.
Ingredients
- 550 grams (2 1/2 cups) of caster sugar
- 500g (2 cups) of blueberries, washed
- 20 ml (1 tablespoon) of lemon juice
- 40 ml (2 tablespoons) of white wine vinegar
Directions
Preheat your oven to 100°C (212°F). Place a small plate in the freezer. Cover a large baking tray with a sheet of baking paper. Spread the sugar on the tray and warm in the oven for 10 minutes.
Meanwhile, place the blueberries, lemon juice, vinegar and 1/4 cup of water in a large pan. Add the sugar; stir the mixture over low heat until the sugar fully dissolves. Increase heat until mixture is at a slow boil. When scum forms on the surface, remove with a slotted spoon.
After about 20 minutes, test to see if your blueberries jam has reached a set. To test your jam place a spoonful onto the chilled plate you put in the freezer, push mixture with your finger. If the jam “wrinkles” and a skin appear, then your blueberry jam is ready. If not, wash the plate and return to freezer. Cook the jam for approx another10 minutes and then do the test again. Continue this until your jam is set.
Pour the jam into the sterilised jars. You sterilise the jars and lids by washing them in hot soapy water and rinse well. Place jam jars and lids in a saucepan and cover with water. Bring to the boil and boil for about 10 minutes. Then put jam jars and lids on to a baking tray lined with baking paper or newspaper. Place in an oven preheated to 100°C (212°F) for 12-15 minutes or until dry. This will sterilise the jars so your jam stays fresh and tasty for a long time
Label, date and store jars in a cool, dark place away from direct sunlight until ready to use. Give the jam at least 3 hours to set and then enjoy your tasty jam on a toast. Once the jar is opened, store in the fridge for 6 to 8 weeks.
